It's easy to make even though there are a lot of ingredients.

Ingredients

  • 2 cup Carrot (Finely grated)
  • 2 cup Granulated sugar
  • 2 cup All-purpose flour
  • 4 Large eggs
  • 1 cup Vegetable oil
  • 1 tsp Vanilla
  • 1 tbsp Ground cinnamon
  • 1 tsp Salt
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Ground nutmeg
  • 1/2 cup chopped walnuts (Optional)

  • 250 g Unsalted butter (1 stick, softened)
  • 250 g Cream cheese (softened)
  • 1 1/2 cup Powdered sugar
  • 1 tsp vanilla extract

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

  3. In another bowl, beat the eggs and vegetable oil until well combined. Add this mixture to the dry ingredients and mix until just combined.

    I recommend using a mixer to help mix the ingredients. Use the medium level until you have incorporated all the dry ingredients and at the end increase the speed.

    You can do it manually with a hard palette, but you have to beat it very well so that no lumps form in the mix.

  4. Fold in the grated carrots and chopped nuts (if using).

  5. Divide the batter evenly between the prepared cake pans

  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  7. Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer them to a wire rack to cool completely before frosting.

  8. After baking and decorating your carrot cake, it's time to share it with friends and family. This cake is perfect for special occasions and as a heartwarming gift. Pair it with a cup of tea or coffee for a moment of tranquility as you savor each bite.

  11. Gradually add the powdered sugar, about 1 cup at a time, beating well after each addition.

  13. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a generous layer of cream cheese frosting over the top.

    Place the second cake layer on top and frost the top and sides of the entire cake with the remaining cream cheese frosting.

     

  14. Optionally, garnish with chopped nuts or a sprinkle of carrot on top of the frosting.

  2. You need add layers the frosting. Add first layer, wait in the refrigerator for one hour and then add other frosting layer.
