  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    You can do it manually with a hard palette, but you have to beat it very well so that no lumps form in the mix.

  4. Fold in the grated carrots and chopped nuts (if using).

  5. Divide the batter evenly between the prepared cake pans
